Default Converting lower bunk to fold down bench seat

I have three kids that will be traveling with me so I need to convert the lower bunk into a bench seat, equipped with seat belts and also able to fold the seat down so I can still use it as a bed. Does anyone have a suggestion for a type of Jack knife sofa/bed frame or other method?

Dan-keep in mind that all the seat belt mounting is National Safety or Dept of Trans approved on a factory built conversion.
Went through this with Villa front seats for my Freightliner and it seems that they weren't approved for Canada?????

our jack knife sofa (on one side) and our pull-out sleeper sofa (on the other side) both have seat belts....but those belts are anchored to the FLOOR, not the sofa/couch.
