Good idea on the four way seating with table. I wonder how well that would work with respect to getting in and out of the front seats with the table in place. I like the concept, not sure how to execute it.

Did you look at the T2000's to see if they would meet your needs? I don't know a whole lot about tractors, just that I liked the ergonomics of the T2000 better than the Volvo.
The more I think about your dinette idea, the more I like it. Then I could have a slide-out with a sofa in part of it and bunks in the other part (with the lower bunk doubling as a second sofa). Put the entry right next to the cab and leave the entire wall opposite the slide out for the kithen area. That'd be a lot of counter space, which is what my wife seems to need the most when cooking. Maybe even build a bit of an "L" into it.
Then I would just need to figure out where to mount the projector and the roll-down screen.
