It does seem that the SeeLevel product is the only simple reliable choice. I went to their website and see that they have a sale going on, so I ordered the 4 tank version and will figure out how and where to mount it when it arrives. It is normally $375, but is on sale for $235.

I am thinking of just mounting it in the water bay so that I do not have to run wires all over.

My main reason for this is that we carry 200 gallons of water in two tanks. When we are off-grid, I fill the tanks and when I know were are going to another place with hookups, I run low water to reduce the weight. We are fairly light for our size and I know the extra water weight is insignificant.

Probably a part of me just wants to know how much water I have even though I am not a control freak...I am not, I am not!
